Elderflower syrup is the result of a patient work, which begins with the collection of flowers on trees far from sources of pollution. Once in the laboratory, the flowers are carefully separated from the woody part and soaked together with the lemon in fresh water. After 48 hours we proceed to filter and mix the infusion with the sugar until it reaches 63 brix; the addition of a little citric acid for acidification completes the recipe. The syrup is finally heated and finally bottled.
