Tasting Note

It is the symbolic product of the Company, a direct consequence of the decision to recover and enhance the Monumental Vine of Farys in the municipality of Saint Denis. Monaja 300 also derives from a blend of native vines: Petit Rouge (40%), Fumin (30%) and Vien de Nus (30%) and in addition to the Monumental Vine, with its 300 years, other vines of the average age are used over 80 years old, located mainly in the middle valley, in the adret, at altimetric altitudes ranging between 500 and 800 meters with southern exposure. As a consequence of the particular age of the plants and the yield of 30 quintals / hectare, production is limited to 300 bottles per year. The alcoholic fermentation in stainless steel tanks, lasting 8-10 days, is followed by a long post-fermentation maceration of 3-4 weeks in order to extract all the potential and characteristics of the terroir. Once drawn off, the wine continues its aging process in French oak barrels for 24 months, to which are added a further 6 months in the bottle before being put on the market.
